I’m trying to focus on squash and gourds for Fall and all the terrific recipes. I just made these zucchini boats! Very low calorie, filling and fast and easy!
Ingredients:
- Green Zucchinis.
- Shredded Parmesan cheese.
- Minced Garlic.
- Salt & Pepper.
PREP:
- First wash your zuchinni and cut in half.
- Sprinkle Parmesan cheese over your zuchinni.
- Salt, pepper and season to your desire! I added some chopped garlic to mine!
BAKE:
- Roast uncovered in the oven at 375 degrees for 15 -20 minutes.
- Remove when cheese has melted and is slight golden brown on the edges. Zuchinni should be soft but not mushy. You get a slight little bit of crunch when you bite or cut.
- Let sit for a few minutes so the cheese can set as they cool.
- Layer cheese layer first.
- Do not use spray oil.
- Bake uncovered.
- Rotate tray half way through.
- Try to use the same size of zucchini for even baking or take small ones out first and continue to bake the larger ones.
- If your cheese slides after baking cut your boat into smaller pieces.
